Can it!

Lately I have been canning & jamming up a storm and I even tried my luck at dehydrating some apricots (not so lucky). Once you get the hang of it, it's not so hard. The problem is the fruit ripens in the dead heat of summer and the last thing you want to do is stand over a hot stove boiling water. But it will be nice to be able to enjoy our fruit year round. My canning room is starting to get an impressive collection of jars and summer's not over yet. We still have 2 peach & 2 plums trees waiting to ripen. (Not to mention the acres of apples we'll have access to.) Next up applesauce!!
