Valentine's

We had a wonderful Valentine's Day Weekend. Our cousin's from Salem came to visit for the weekend, it was so good to see them and the girls', Kaitlyn, Sarah & Mackenzie, were so helpful with Hunter, Logan & Grady. Hunter & Logan LOVED playing with them. Jared and I were able to leave the boys for a few hours with the family and go watch a movie for our date night. One
night we went bowling (pictures will have to be posted later), the next day we played the wii and apples to apples... oh and we made lots and lots of candy & baked goodies. Oreo, coffee & mint chocolate truffles, cupcakes and brownies. Yum! The oreo truffles are so easy to make and were amazing!

OREO TRUFFLE RECIPE
  • 1pkg double stuffed oreos
  • 1 8oz pkg of softened cream cheese
  • 1 bag of chocolate morsels (milk, dark or white- your choice)
Take the oreos and crush them up in a ziplock bag, pour them into a bowl with the cream cheese and mix them up really well. Chill it for 10 minutes. Line a cookie sheet with wax paper. Scoop the mixture into little balls about 1 in. in size. (Chill again for a few minutes if they are too sticky to form nice smooth balls.) Next, melt the chocolate in the microwave for 90sec. at 50%, stir and keep melting in 30 sec. increments until it's smooth. Now, drop balls one at a time in the chocolate covering them, use 2 forks to lift out and set on the cookie sheet. Chill for an hour and ENJOY! We were thinking they'd be great frozen, too... maybe over some soft serve vanilla icecream. =) If you want to get really fancy you can drizzle a chocolate of a contrasting color over the top to decorate them.
